Penacorada

An artisanal Spanish blue cheese. It is made from cow's and goat's milk, then wrapped in sycamore or maple leaves and left to mature in the humid caves of the Picos de Europa region. This natural environment gives the cheese a distinctive, earthy flavor with slightly spicy notes, while also being milder and sweeter than other Spanish blue cheeses.
